I am a good medic, I heal the patients, kill when I have to, bring home the bratwurst, but the only thing the is keeping me from being a great medic is my luck. For some reason, whenever I round a corner, there is a demoman with a billion stickies waiting for me. Whenever I run out of the gate at startup I get head shotted or blown up by stickies, even though I wait for a few other teammates to go out to see if they die first. The second I respawn there is an uber pyro running down the hall. (This seriously happened to me twice in a row at goldrush.)
How do I stop the random deaths, and just deaths in general?

You have to understand that as a medic, any decent opponent worth his salt is going to be targeting you first, particularly spies and snipers. Always try to stick with a teammate (preferably one who will protect you), always move around to avoid snipers and check behind you for spies, and always err on the side of caution. Find a group of teammates if you can, and stay behind them. Communicate with your team and ask if the way ahead is clear of stickies and so forth.
Sometimes you get bad luck - it's just the way it goes. But don't be afraid to run away. From your comment above, if you run into an uber pyro by your spawn, just run back inside and hit the supply cabinet. They can't follow you in there. If you're trapped wait for a teammate to re-spawn and buff them, so they can clear out the spawn campers (or call for a teammate to come help you).

Medic's greatest weakness is that they pay attention to their patients AND the battlefield. Other classes really only pay attention to the battlefield. Because of this, Medics tend to die in these ways. The best thing I can say is hide as much as you can and always watch your back. Your medigun beam will wrap around corners and can extend beyond the length of most doorways. Use this to your advantage so that you are almost never exposed to open fire. Also, lead your patients in to battle first, so that you can use them to test the waters around the corner.

As a Medic, you are the ONLY class who does not have a non-melee weapon that can interact with Stickies. Every other class can shoot them one by one from a safe range, so you have to be careful. In the event a Demo sets up a chokepoint like this, you really have very little options, other than taking a new route.
When engaging a Demo, I find that it's often better to rush the Demo and sink in a slew of needles, especially when you know they just fired their 4th regular grenade. Either way, Demos can be very tough at times. Remember too that you can also outrun any class other than a Scout (and if a Medic is chasing you, chances are he'll catch up eventually since as the pursuing individual, he can take incremental shortcuts in your route) If a Pyro is coming down a hallway, and he has the flamethrower out, TURN around and run (if you back pedal, you suffer a speed handicap and if you don't strafe, the Pyro will catch up with you)
Much of being a good Medic involves knowing when to give the situation space, and when not to. Pyros who don't change to shotgun can often get taken down by the Blut and some back pedaling. But if you're too close, then it's best to high tale it out of there, taking as many shortcuts as you can so that you can lose line of sight with him.

Most of my deaths are from demos. I pretty much adhere to a strict rule of running away from stickies and always being behind my team when there's a demo out there. Try to find a good pyro as a buddy since they can push stickies. A heavy will work too as they can shoot stickies easily and have more health.
I would put demos as higher threats to a medic than pyros simply because you can see a pyro death coming and demos tend to blow you up immediately--if they fail the first time, you'll likely live.

Not so much on "most likely live" for me. Demos are higher threats than pyros because you can't run away. When I run into a demo, if he's with allies, I can't charge, unless I'm in saw range, and am close to uber. I can't run, because a cordon of stickies appears, and I get gibbed. If he's alone, and I'm not close enough to saw, I can't dodge well enough to avoid sticky traps. Also, most demos I tend to encounter have ungodly grenade aim. Best case scenario, I get surprise at close range, and then I can sometimes get the kill. Otherwise, at medium range I tend to die, though it's dependant on the skill of the demo, at long, can run away. Of course, if I can get behind a wall, then I'm safe. Needles tend to do damage and discourage, but rarely seem to do enough to keep me alive. I suppose I should try to use the 125 damage per second at point-blank. To stop dying, you need to minimize exposure, and minimize risk. By rarely being within enemy line of fire, you minimize the amount of damage you take. By following teammates, and watching every surface, behind you, and watching for snipers, you can minimize your risks of being killed by attacks when you advance. Also, know when to retreat, and where. I commonly find after an uber my planned escape route was blocked by stickies, and tend to die from being blown up.

I usually start retreating as my uber runs out to avoid that happening, as I find the small bit of extra healing on my buddy after the uber usually isn't decisive--he'll either be taking so much fire we both die anyway, or he'll have done enough to escape alive without me healing him for another 3 seconds.
