Its a very difficult achievement, I agree and indeed quite situational, but it is not impossible. In fact, I just managed (with the assistance of another engineer) to pull off this exact same feat today morning. Not only did we survive, but we managed to score both the medic and the ubered heavy after their charge ran out. it probably had to do with the fact that we were at the extreme edge of the Heavy's effective range - but to sit there, stand still and hammer away at the L1 sentry while taking some damage (but fortunately not enough to kill you) takes a lot of fucking guts.
Consider it as one of the 'lucky' heights of engineering in this case - the ability to co-ordinate, place and keep your L1 sentry alive against an enemy uber is NOT something to be laughed at no matter who you are. As it stands, I see it as one of the tougher achievements to unlock - probably the last one to be unlocked, in fact. Its no different from similarly difficult but equally situational medic achievements either.

Gunner TAG: Have a single Sentry gun Get 5 Kill Assists with a friendly Sentry
