I know what you mean man, its fucking absurd trying to fight them in an open space.  I have 2 tips for you:

1. Practice the shit out of both these maps:

tr_rocket_shooting2
tr_airshot_v0

About a half hour every day will help you out a LOT.

2. It's all about prediction, learn to predict where someone is likely to go.  I don't mean predict wether or not they are going to go left, or jump etc..  Get yourself in a position where they only have a or 2 ways to get to you, sticky them up and get your bouncy's out.  It's helped me out MANY times against a LOT of great scouts.

I often play scout's, (and kinda suck ) and I don't like fighting with a demoman. They predict and use sticky's. Remember that scouts only have 125hp.

Stickies are useless vs. a good scout.  With the detonation delay you'll be dead or he'll be on your dead before you blow it up, 2-3 shot and you're dead.  Use pipes and just predict where they are going ahead of time.  Need to take distance into account.

Don't panic.  Just be calm and aim your pipes carefully.

Against random pub scouts? Use stickies, but against better scouts you wont get a hit on them, so you'll need to use pipes, and if they are double jumping around, it becomes a lot easier to hit them.

Yep, use pipes and practice a lot.

One thing I'm doing as demoman is banning myself from using stickies until I get good with pipes. I sticky the point / intel (so at least I'm doing something for the team), then go out with my pipe launcher exclusively.

Remember, one pipe hit kills a scout. But by the time you've laid and detted one sticky, he's hit you (or worse the medic) 2-3 times with the scattergun, and he may still not be dead.

Best defense is your surroundings, move into an enclosed space

you can one pill scouts, just doesn't happen much (random damage) just hit them once and hit em again. It's easier said than done against a half decent scout.
